Our Methods

When it comes to preparing delicious dishes, we’re very particular about the ingredients we choose, almost obsessed. We change our menu at least four times a year, to showcase the best foods of each season.

Local Food

All of our food comes from local sources, most from Colorado. We believe that this commitment to local producers not only makes better food, but also is better for the economy and the environment. We strive to use Colorado’s plethora of amazing ingredients as much as possible.

Plentiful Ocean

We follow the guidelines of the Clean Fish Alliance and the Monterey Bay Aquarium Seafood Watch when choosing the fish we serve. These two nationally known programs recommend fishes that are not overfished and are in plentiful supply – in no danger of ever becoming endangered.

Selective Meats

We buy most of our meat (including beef, lamb, chicken, and pork) from regional farms and ranches. The animals are fed local grains and grasses and treated humanely.
